Hi,

You can remove the file recent-projects from your user settings 
directory (location varies -- it's
listed 5th in Wing's about box, which is accessed from the Help menu).

Wing should actually be filtering out non-existent items in the recent 
lists upon reading them.
This may not occur until you quit/restart Wing, however.
